Roll your pasta dough flat, about 1mm thick and cut into short thin tagliatelle like strips. Roll the strips until they form little rods. Fold the rolled rod in half then roll one hand one way and the other hand the other way until a nice twisted helix shape is formed. Then cut the gemelli so that they're about 4cm long before cooking.
